Speyside’s historic Coleburn Distillery is entering an exciting new chapter, with plans to open a 62-cover bistro this autumn. It marks the first phase of its long-awaited transformation into a full-scale whisky and hospitality destination.

Located near Elgin, the once-silent distillery is set to officially reopen in 2027, more than four decades after it was mothballed. The wider vision? A vibrant whisky resort combining heritage, luxury accommodation, and immersive visitor experiences.

A First Look: Introducing The Kitchery

At the heart of this initial phase is The Kitchery, a new bistro set within the distillery’s former Piggery building. Once used for livestock, the space is being carefully reimagined into a contemporary dining destination while retaining its historic charm.

The venue will feature:

  • A relaxed 62-seat bistro
  • A bar and retail space
  • A private dining and whisky tasting room
  • A chef’s table-style kitchen at the centre of the experience

The concept focuses heavily on locally sourced ingredients, celebrating the rich agricultural landscape of Speyside while offering a refined yet approachable food and drink experience.

Gwenda Smits, director at Coleburn, described the opening as a pivotal moment:

“The Kitchery is just the beginning. It gives visitors an early opportunity to connect with the site and become part of its journey as the wider resort develops.”

Reviving Heritage with Modern Design

The transformation of The Kitchery is being led by Significant Others, a design studio known for blending heritage with contemporary aesthetics.

The interiors will incorporate:

  • Warm leathers and natural timbers
  • Aged copper accents
  • Backlit rippled glass

This thoughtful material palette aims to preserve the building’s original character while elevating it into a modern hospitality space.

Director Ruth Hay noted that the project represents a key milestone in bringing the broader vision for Coleburn to life, setting the tone for future phases of the development.

A Boost for the Local Economy

Beyond its appeal to visitors, The Kitchery is expected to deliver tangible benefits to the surrounding region. The project will create approximately 15 direct jobs, alongside additional opportunities across:

  • Agriculture
  • Logistics
  • Hospitality

By prioritising local sourcing and partnerships, the development reinforces its commitment to the Speyside community.

Sustainability at the Core

Sustainability is a central pillar of the Coleburn revival. Construction of The Kitchery began in March, with the installation of a biomass boiler by Reheat.

This system will form part of a wider district heating network designed to supply multiple buildings across the site with low-carbon heat and hot water.

Reheat director Neil Harrison highlighted the significance of this step, noting that the integration of renewable energy solutions demonstrates a clear commitment to environmentally responsible operations from the outset.

The Bigger Picture: Coleburn Whisky Resort

The long-term vision for Coleburn extends far beyond the bistro. Once complete, the site will evolve into a fully integrated whisky resort, featuring:

  • Luxury whisky lodges
  • A distinctive Pagoda penthouse
  • Expanded hospitality and visitor experiences

The project is being led by D&M Winchester, alongside renowned whisky figure Keith Cruickshank and Organic Architects.

A Taste of What’s to Come

Coleburn has already begun building anticipation for its return. In October, the distillery introduced its Local Heroes whisky range, three blended malts designed to showcase distinct flavour profiles:

  • Sherry Bomb
  • Sweet Peat
  • Big Smoke

These early releases offer a glimpse into the character and creativity that will define Coleburn’s future.
